Have you ever gorged on peaches with a rich, sweet and creamy butterscotch caramel sauce? The first sip of this beautiful washed coffee brought back memories of this childhood favourite for us. It’s sweet and creamy and has a very pleasant but mild acidity - just like stone fruits. It puts us in the mood for summer, warmth and all the delicious fruits, aromas and tastes that come with that. Couldn’t come at a better time – wouldn’t you agree?
Burundi is among the smallest coffee-producing countries in East Africa. It offers near ideal conditions for coffee cultivation: elevations of 1500 - 2000 masl abundant rainfall and approximately 800,000 families who cultivate an average of 150-200 coffee trees per farm. After a civil war in the 1990s, coffee cultivation played a big role in rebuilding the country’s agricultural sector and has helped to attract foreign investment.
Masenga Hill is one of 5 hills overlooking Lake Tanganyika. The coffee cherries produced by the coffee farmers living on these hills are all delivered to Migoti Hill washing station, where they are processed by Zephyrin Banzubaze of Migoti Coffee Company and his team and prepared for export. In 2016 Migoti Coffee Company built the coffee washing station at Migoti Mountain, partnering with industry experts who provided technical expertise. Coffee trees are owned by the community, and Migoti purchase the coffee cherries directly from the farmers who harvest and deliver the cherries to station. The coffee farmers receive education and training on how to prune and properly care for their coffee trees, topics like intercropping, planting shade trees, utilizing green fertilizers, stabilizing soils and natural pest control. By working together and following best farming practices the farmers can increase the yields from their coffee trees by five- to ten-fold. In turn Migoti Coffee Company is working on implementing a profit share model which will reward best practices with price premiums for excellent quality. And the hard work is paying off – the coffee produced by Migoti Hill is frequently placing as some of the best speciality coffee coming from Burundi.
With regard to the actual processing of the coffee – at Migoti washing station, the coffee cherries are separated by day lots coming in from the 5 different hills around the area. They are depulped and fermented in water tanks for 12-16 hours over night. The next day they are washed and consequently dried for 2-3 weeks on raised netted beds which are covered during the night for extra protection.
