It has a round chocolatiness, a very balanced, grape-like acidity and an overall smoothness that is just what you want in a coffee! This coffee comes to us through our friends from Right Side Coffee in Barcelona. Joaquin, their founder, has spent the last few years building solid direct trade relationships with a group of small coffee producers from the Guadalupe region in the Department of Huila. This is an area shrouded with lush vegetation along the steep slopes of the Andes, brimming with the most beautiful vistas and near perfect climatic conditions for growing coffee.
Colombia is the third largest coffee producing country in the world and the national government has developed a rigorous quality scheme that rewards producers who adhere to the standards with certifications. Consequently, the benchmark for quality coffee in Colombia is high to start with and the specialty coffee sector has seen even more drastic quality improvements over the last decade or so. Our friend and mentor Joaquin has made it his mission to seek out the best amongst the best and to work with small producers who are keen to think outside the box and want to keep improving their coffees year after year.
Don Elver Novoa, the owner and coffee grower of Finca San Luis, is one of these producers. He has worked tirelessly to establish a consistently excellent flavour profile for the coffees he grows, mostly of the Bourbon and Colombia varieties. His plantation is situated near the village of Las Mercedes at a staggering altitude of 1830 masl. It is moulded into a spectacularly steep, hilly landscape with plenty of sunlight and water to nurture his crops. The coffee trees grow in amongst other trees and shrubs which form their own little eco system and keep each other healthy.
Thanks to the price premium Right Side Coffee has paid Don Elver last year, he was able to upgrade his coffee processing infrastructure, e.g. installing a new solar dryer. These changes help him with the steady improvement of his quality regime. After hand-picking the coffee cherries, selecting only the ripest fruit, the coffee is depulped and fermented in tanks. Once the point of optimum fermentation is reached, the coffee is washed and taken to the solar dryer, where it rests for around 20 days until it has reached the proper humidity levels.
